Gluten and dairy free crepes with healthy whole natural sugars, super nutrients to quieten the sugar loving spleen head while feeding the body with delicious goodness. Super easy to whip up with healthy and divine ingredients, this luscious brunch puts a smile on everyones dial.

INGREDIENTS

  • 1 cup buckwheat flour organic
  • 1 cup brown rice flour
  • 1 egg
  • 1/2 cup filtered water or almond milk
  • 1 mango peeled and chopped
  • 1 pomegranate seeds removed (over a deep bowl with a rolling pin, tap back of 1/2 a pomegranate to remove the seeds, pick out any pith)
  • 2 sprigs fresh mint leave
  • 5 strawberries diced
  • zest from 1/2 lime
  • juice from 1 lime
  • 3 tablespoons flax seed oil (must keep in fridge)
  • 2 tablespoons shredded coconut
  • coconut yoghurt natural or vanilla bean
  • maple syrup organic
  • 2 tablespoons slipper elm
  • pinch cinnamon
  • coconut oil to cook crepes in

METHOD

In a large bowl place buckwheat & rice flour & 1 tablespoon slippery elm
Whisk egg till light and frothy add to the flours
Slowly add water or almond milk whisking well to remove any hard lumps
Mixture should be the consistency of a runny smooth cake batter.

In a bowl place mango, strawberries, pomegranate, fresh mint, lime juice and zest
In a dry fry pan (no oil) cook coconut over a medium heat, keep an eye on it try not burn it, the aroma is divine.

Heat 1/4 teaspoon of coconut oil in large frypan, ladel in crepe mixture to middle of pan, pick pan up, with your wrist gently swirl pan around to spread crepe mixture evenly, smoothly and thinly. Have oven turned on low temperature and keep cooked crepes warming in the oven until all the mixture has been made into crepes.

TO SERVE

Place crepe on plate
Spoon coconut yoghurt in the middle of crepe
Spoon fruit mixture over yoghurt & crepe
Sprinkle 1/2 teaspoon slippery elm over crepe
Pour 1/3 tablespoon flax sed oil over the top
Pinch cinnamon & toasted coconut
Drizzle maple syrup to complete the delicious feat.
