Organic rainbow rice with smoked fish, colourful foods makes for a colourful life. Keeping cooked grains ready to go is always helpful for a quick whip up meal. This tasty rainbow rice takes 7mins to make and tastes delicious. Whole grains are high in B Vitamins and jam packed with Minerals to support the nervous system. Enjoy this healthy fuel to burn tasty one wok delight throughout the day.

INGREDIENTS

  • cooked brown rice, I prefer medium grain and buy local organic if possible
  • 1 carrot diced
  • 1 stick celery diced
  • bok choy diced
  • red capsicum diced
  • 2 organic free range eggs
  • nori seaweed sheets x 2
  • black sesame seeds
  • 2 cm piece of ginger grated
  • 3 kaffir lime leaves
  • black garlic chopped small
  • zest of 1 whole lime
  • piece of smoked or whole trout de boned
  • fresh limes 1/2 per person plus 1 whole for cooking
  • tamari
  • toasted sesame oil
  • sunflower sprouts
  • Coconut oil for cooking

METHOD

Pre cook brown rice,  1 cup rice rinsed and drained, place in saucepan with 2 cups water, bring to boil & simmer (absorption method or cook in a rice cooker)
Heat oil in a wok, add lime zest, ginger, kaffir lime leaves
Add all vegetables and stir quickly
Add lime juice & a splash of water to steam, spread out vegetables to outer edges of wok leaving an open space in the middle
Add a little more oil and pour in the beaten eggs
Stir cooked egg through vegetables once egg is not so runny
Add brown rice, smoked trout, black garlic & sesame seeds to wok, heat through
Crush nori over wok breaking in to small pieces

TO SERVE

Fill a small bowl with the rice packing firmly, upturn the bowl face down into a larger bowl and remove top bowl to leave rice shape.
Splash tamari & toasted sesame oil over the rice
Place sunflower sprouts & black sesame seeds over the top
Serve with 1/2 fresh lime
