Glorious dahl is good any time of the day for breakfast lunch or dinner, add as little or as much spice to make it delicate and gentle on the stomach or fiery with a kick. Good for the heart and circulation. This vegan meal with combined lentils and grains, contains all the necessary amino acids to help muscle, blood and brain health.
INGREDIENTS
- 1 cup red lentils organic
- 1 ½ tablespoons organic vegetable bouillon
- grated ginger 2 cm
- grated turmeric 1 cm
- 2 teaspoons cumin powder
- 2 pinches of cayenne pepper
- 5 cups of water +
- 1 cup Australian quinoa
- 3 pinches sea salt
- 1 teaspoon asafoetida powder
- 2 cups fresh salad greens
- 2 tablespoons sprouts
- 1/2 red capsicum
- 2 tablespoons fresh coriander
- 2 x spring onion for garnish
- zest 1/2 lemon
- lemon juice 1 whole lemon
- olive oil & black pepper to dress salad
METHOD
- Wash Australia quinoa and drain
- Place quinoa in a saucepan cover with 2 cups of water
- Add a pinch of salt, bring to boil & simmer with lid on (absorption method) around 20-25mins.
- Wash lentils strain off soapy coating
- Bring 2 1/2 cups of water to boil add red lentils, bouillon, asafoetida, pinch of salt bring to a simmer.
- Add grated ginger, turmeric, cumin, cayenne & 1/ 2 the lemon zest. Simmer for 30 mins or until red lentils have dissolved and become a lovely smooth paste. Add more water if need be.
- place salad greens, sprouts, capsicum, coriander, back pepper & pinch of celtic sea salt in bowl
- dress salad with lemon juice, remaining lemon zest & olive oil
TO SERVE
- Place quinoa in a small bowl & firmly pack, turn bowl upside down into a larger bowl, remove small bowl to leave quinoa in shape
- Pour dahl over the top & garnish with spring onion
- Place salad over dahl and quinoa
- Enjoy this nourishingly gentle whole hearted meal
