Delicious and nutritious buckwheat porridge. This wholesome bowl of goodness helps to heal a weak damp spleen and stomach, it will help to warm the blood, aid circulation, re-energise the system, hydrate the skin and keep all cylinders firing throughout winter.
INGREDIENTS
- 1 1/2 cups buckwheat OR Quinoa (Australian grown) OR for a quicker option use
- Oats or cooked brown rice
- 1 1/2 cups filtered clean water
- 1 green apple or pear sliced/chopped
- hand full of strawberries chopped (keep 3 whole to serve)
- 1 teaspoons cinnamon
- Fresh ginger 2cm or more chopped finely/grated
- Fresh turmeric 1/2cm chopped finely/grated
- 5 Chinese dates &/or 1 tablespoon Goji berries
- 1 star anise
- 1 tablespoon coconut flakes
- 1 tablespoon molasses (optional)
TO SERVE
- 1 teaspoon bee pollen
- 1 tablespoon Udo’s Oil
- 3 strawberries sliced
- pinch cinnamon &/or nutmeg, vanilla powder or mixed spice
- maple syrup or honey to taste
- warmed almond or coconut milk
METHOD
- Wash buckwheat & strain
- Place buckwheat and water in pot, bring to boil.
- Add apple/pear, strawberries, cinnamon, grated fresh ginger, turmeric, Chinese dates or goji berries, star anise, coconut
- Bring to boil & simmer with the lid on for 15-20mins, till buckwheat is cooked through (absorption method).
- Add molasses stir through
TO SERVE
Place porridge in bowl, add fresh strawberries, sprinkle with bee pollen, cinnamon, pour Udo’s oil over the top with warmed almond or coconut milk and drizzles of maple syrup or honey YUM!!
